Vegan cookie dough hummus is easy to make and delicious to eat!
This version of traditional cookie dough is low in sugar and high in protein.
2 cups chickpeas, drained (reserve the liquid)
2/3 cup nut butter
2 tsp. vanilla
2/3 - 1 cup oats
dark chocolate chips
Directions: Drain the chickpeas and set the liquid aside. You can use dried garbanzo beans that you have soaked yourself or canned beans. Pour beans into food processor or high speed blender. Add your favorite nut butter. I used fresh ground peanut butter from our local health food store. Blend until smooth, adding the liquid from the beans as needed to create a consistent dough. Add vanilla, sugar, and oats. Blend well. Stir chocolate chips into mixture by hand. Serve with apple slices, carrot sticks, crackers, or just with a spoon!
