Dark Chocolate Birthday Cake
This cake was created for my daughter who is gluten-free. I made it vegan, too, so that I could enjoy a piece with her. A perfect birthday treat!
3 cups gluten-free flour (King Arthur Gluten-Free is my favorite)
2 cups of sugar
1 cup cacao powder, unsweetened
2 tsp. baking soda
2 tablespoons apple cider vinegar
2 cups unsweetened almond milk (or any non-dairy milk)
1 tablespoon vanilla
2/3 cup olive oil
2 flax "eggs"
Grind the flax seeds into a meal. Soak 2 tablespoons of flax meal in 1/4 cup warm water until it gels.
Stir all dry ingredients together. Add oil, milk, vinegar, and flax mixture. Beat in a mixer or by hand until smooth. Pour cake batter into well-greased 8 or 9 inch cake pans. Bake at 350 degrees. Cake is done when it springs back when touched in the center. Remove from pans and cool on rack before frosting.
4 cups powdered sugar
1/4 cup cacao powder
4 tablespoons vegan butter or peanut butter
1/4 cup almond milk
1 tsp. vanilla
Soften butter or peanut butter. Combine all ingredients and beat until smooth.
