Double Chocolate Cookies


1 cup of vegan butter (vegetable shortening or oil work well)

1 cup sugar

1 cup brown sugar

2 tsp. vanilla

2 cups gluten-free flour (King Arthur is my favorite)

1 1/2 cups cocoa powder

2 tsp. baking soda

1/4 cup almond milk or your choice of non-dairy milk

2 cups dark chocolate chips or pieces


Preheat oven to 350 degrees. Soften the shortening and mix with sugar, vanilla, and milk. Stir in dry ingredients. Fold in chocolate pieces. Place scoops of dough on baking sheet at least two inches apart. Bake until the cookies appear dry on top. These cookies are gluten-free and vegan.

Low sugar option: Cut the sugar in half and add 1/2 to 1 cup of apple sauce. If using apple sauce, cut the non-dairy milk to 1 tablespoon.
