Rainbow Chili

This easy crock pot chili is a light meal with many possibilities.

Modifying the recipe with your favorite veggies is easy and fun to do!


Ingredients:

2-4 cans of chili beans

2-4 cans diced tomatoes

tomatoes, any variety

1 red bell pepper

1 sweet potato, large

1 small butternut squash

1 can sweet corn

1-2 green bell peppers

1 eggplant, small

1 onion, large

olive oil

avocado


Directions:

Mash 1/2 of the canned chili beans with a kitchen masher. Chop all produce into chunks. Lightly saute the sweet potato, butternut squash, peppers, onion, and eggplant in olive oil until just tender. (I started the potato and squash first, as they take more time.) Put all beans (mashed and unmashed) and fresh produce into crock pot. Add canned tomatoes. Stir together. Set crock pot on high. Cook to desired consistency. Enjoy topped with avocado.
