Simple Peanut Butter Cookies

These easy three-ingredient cookies have many variations. They can be made vegetarian or vegan, so both options are presented here. Enjoy!


Ingredients:

1 cup natural peanut butter, creamy or crunchy

1 cup sugar (or honey)

1 flax egg (or egg)

nuts & chocolate chips, optional



Directions:

If you are going for the vegan version, mix 1 tablespoon of ground flax seed and 3 tablespoons of lukewarm water. Let sit until it gels. Mix peanut butter, sugar, and egg/flax egg together. The dough will be stiff. You can add nuts or chocolate chips, but these cookies are terrific without. Bake at 350 degrees on an ungreased cookie sheet. The cookies do not spread out much, so can be placed fairly close together on the baking sheet.


Note: I typically use less sugar than the recipe calls for.
