Vegan Chocolate Protein Bars

The recipe, if you can call it that, is so easy. Begin with 1 cup of the nut butter of your choice. Add cacao powder, nuts, seeds, oats, etc. as desired. Feel free to play with the amounts for each ingredient...Mine are never exactly the same! Mix the dough until firm. Press into glass pan and chill. Cut into one inch squares. Enjoy any time of day!


For this batch I started with 1 cup natural chunky peanut butter. I added 1/4 cup cacao powder, 1 tablesoon baobab powder, hemp seeds, flax seeds, and trimmed them with natural mini dark chocolate chips. All ingredients can be found at your local nature or health food store. Pepitas, oats, shredded coconut, and chopped nuts are some of my other favorite ingredients for these bars.


Such a simple recipe for a delicious treat! But, what about nutrition? As the title suggests these bars are loaded with protein, from the peanut butter (8 grams) to the hemp seeds (15 grams). The baobab powder packs in the vitamin C (25% RDA) and iron (15% RDA), while the cacao powder provides magnesium (8% RDA), vitamin C (10% RDA), and dietary fiber (2 grams). You can adjust the ingredients to taste or to cater to your specific nutritional needs.


This simple recipe makes a great breakfast on the run, after school snack, or bite before yoga class. It takes about ten minutes to stir together and a half hour to chill.
